Once upon a time, we made eggplant bacon here at Delish. That's right, egg's best friend got a makeover, sans pork. There were naysayers. Some said we'd gone too far. Long story short, eggplant bacon garnered a lot of haters.
I'm here to tell you that eggplant bacon did not deserve the hate. It was smoky, crispy, salty, and totally complex, much like it's porcine counterpart! On a sandwich, it was downright transcendent. So, to many a Delish fan's chagrin, we've taken it another step in the faux bacon direction with: zucchini!
Yes, believe it or not, you can make zucchini look and taste astonishingly similar to bacon. All it takes is a quick marinade in liquid smoke, maple syrup, olive oil and some spices. After a quick bake in a hot oven, your "bacon" will be ready for consumption. We enjoyed ours on a breakfast sandwich, but I'm sure it'd make a killer ZLT and a perfect accompaniment to a couple sunny side up eggs. Haters to the left!
