How To Make Amazing Zoodles Without A Spiralizer

We went through a zoodle phase at Delish but soon realized that not everyone has, or wants to use, a spiralizer. It's a pretty nifty tool, don't get me wrong. But you really don't need to go out and buy one. Save yourself $10.

However, we never quite fell out of love with the concept of zucchini noodles. A vegetable that makes us think we're eating carbs is exactly the type of "healthy" us pastaholics need. So we gave the Pinterest famous, spaghetti "zoodle" a makeover using a vegetable peeler. The amazing twirlable outcome: zucchini pappardelle.

To create the flat, wide noodles, peel a full zucchini lengthwise. The first couple pieces will be mostly dark green and kind of thin due to the vegetables round shape. Discard any sad pieces and keep peeling. When you get to the super seedy middle, stop.

Zucchini has a lot of water content. To avoid mushy noodles, it's best to lay your noodles flat on paper towels to drain excess moisture before tossing them in any sauce your heart desires. (Our hearts always want alfredo.) If you do this, your noodles will be as close to "al dente" as zoodles will get.
