This New, Adults-only Resort on Santorini, Greece, Has 37 Suites With Private Pools and Stunning Sea Views

Long before Santorini, Greece, became the global vacation hot spot it is today, the Greek island had a bustling mining industry thanks to its rich deposits of pumice stones. It is exactly this part of Santorini's history and its dramatic volcanic landscapes that inspired the island's newest luxury stay, which will open its doors on April 20.

Santo Mine, an adults-only collection of 37 private suites, sits on the site of an old stone mine carved into the cliffs of Oia overlooking scenic Ammoundi Bay. The minimal design blends traditional Cycladic architecture and elements referencing Santorini's mining past.

The property will offer accommodations with private pools or Jacuzzis, a restaurant, a wine cellar, an outdoor gym, and a spa with three treatment rooms. But we suspect the highlight of any stay will be the breathtaking sunsets and picture-perfect Aegean Sea views opening from every suite.

And while the spaces ooze that familiar Cycladic minimalism that has become a signature feature of Santorini resorts, in Santo Mine, the interiors are clad in natural stones and materials like ceramics, wood, and wrought iron and a soothing color palette that together establish a cozy, homey ambiance. Exposed lava stones make a striking — and very chic — contrast with the lightly hued interiors. The suites have floor-to-ceiling windows letting plenty of sunlight — and beautiful views — in. Outside, each patio has a table and seating as well as chaise lounges for tanning.

Guests can also opt to hang out by the infinity-edge pool with a cocktail at hand, created with herbs sourced from the resort's garden. The al fresco eatery boasts unobstructed panoramic sea and pool views and specializes in fresh seafood and seasonal dishes (and sunset vistas). Wine enthusiasts will love the hotel's wine cellar, where they can explore Santorini's viticulture and taste some of the island's best bottles.

The island's volcanic landscapes and their healing properties have also inspired the treatments at Santo Mine's spa, where guests can also take advantage of the hammam and sauna. And those who want to get their heart rate pumping can head to the outdoor gym set against the backdrop of the turquoise Aegean Sea.

Santo Mine is now open for reservations, with nightly rates from $614.
