9 Hearty Vegetable Soups to Carry You Through the Day

In winter—when you wake up before the sun and get home after it’s gone down—lunch should be three things: warming, something that’ll stick to your ribs, and something that you don’t have to make in a panic in the dark before you start your commute (the worst). Hearty vegetable soups can be made on the weekend, portioned into jars (or your favorite lunch vessel), and zapped in the office microwave.
