Getting a peek into the everyday life of the British royal family is always fascinating. Who hasn’t wondered what it would be like to live like royalty, after all? And no one captured our imaginations quite like the effortlessly elegant Princess Diana, affectionately nicknamed “the people’s princess.” Well, according to Darren McGrady, who was a private chef for the royal family for 15 years and who cooked for Princess Diana for four years, she really was just as casual and kind as she seemed.

Chef McGrady shared in a video with Delish that Princess Diana would often come into the kitchen to hang out while he cooked her favorite foods. So what kind of meals did Princess Diana prefer? She liked to eat nutritious vegetarian meals, and introduced the chef to several health foods while she was in residence — apaprently she was even juicing long before the juice craze. And while there were certain foods Princess Diana avoided — she preferred a low-fat diet and didn’t eat cream, butter, beef, or (gasp!) garlic — there were some dishes she just couldn’t get enough of.

According to Chef Darren McGrady, vegetarian stuffed peppers were one of Princess Diana’s favorite meals, which she would eat 2-3 times a week. McGrady would stuff red bell peppers full of nutritious vegetables like zucchini and mushrooms, along with rice, mozzarella, and Parmesan cheese. He would serve the stuffed peppers on a pool of smoked tomato pepper sauce made with ripe tomatoes from the palace gardens.

Another favorite of Princess Diana’s was stuffed eggplant, prepared much in the same fashion as the stuffed peppers. The Princess avoided eating red meat, and often preferred vegetarian meals.

While Queen Elizabeth II always stuck to the menu book that was prepared in advance, Princess Diana would often say she didn’t feel like eating what was planned. Ocassionally, she’d ask for a comfort food like liver and onions to be prepared instead.

According to Chef McGrady, Princess Diana would often come into the kitchen to watch him cook. He said that one time he asked if she’d like a coffee, and not only did she make it herself so he could keep working, she made one for the chef, as well.

Though Princess Diana didn’t often eat red meat, she did like fish. Chef McGrady says she was particularly fond of rainbow trout.

Chef McGrady prepared his roasted chicken and potatoes differently for Princess Diana and the Princes Harry and William. While he would give the princes skin-on roasted chicken and golden potatoes dripping with rich fat, Princess Diana preferred a lighter meal of chicken breast taken from the bone, the skin removed, and sliced.

As for Princess Diana’s roasted potatoes, Chef McGrady would toss them with egg whites and paprika before dry roasting them without fat, as the Princess preferred.
