Some days, being an adult sucks. You get a late notice for the electric bill, your cat pukes on the floor, and your car is making that weird noise…again. On those days, a simple comfort can make everything a little better. While we're not advocating emotional binge eating, there's nothing wrong with an occasional comfort food every now and then. And there's no greater comfort than a warm, gooey grilled-cheese sandwich.
Add some protein and vegetables to remind yourself that you're a grown woman (and to balance the indulgence of layers upon layers of cheese), and you have a recipe that makes you feel like everything will be OK. Bonus: It's really, really hard to mess up a grilled cheese. See, that's at least one thing that went right today!
