6 Ways to Love Deviled Eggs

Appetizer trends ebb and flow, but deviled eggs are like good manners: They never go out of style. Every self-respecting host needs a go-to recipe for deviled eggs in his or her quiver. Likewise, every guest who brings a platter to the party will guarantee herself a return invitation.

Classic Deviled Eggs
Learn the rules first; then break them with our six variations on the Southern staple below. 

Ingredients
12 hard-cooked eggs, peeled
½ cup mayonnaise
1½ tsp. white wine vinegar
1½ tsp. Dijon mustard
1/8 tsp. kosher salt
Dash of hot sauce (optional)
Garnish: paprika

Preparation
1. Slice eggs in half lengthwise, and carefully remove yolks, keeping egg whites intact. 
2.Grate egg yolks using small holes of a box grater (figure 1). Mash together yolks, mayonnaise, and next 3 ingredients. Add more salt or hot sauce, if desired.
3. Spoon or pipe yolk mixture into egg whites (figure 2).

Trout Caviar-Horseradish
Impress your guests with this elegant twist on the classic. 

Preparation
Prepare recipe as directed in Steps 1 and 2 (above). Stir 3¾ tsp. prepared horseradish into yolk mixture. Spoon or pipe yolk mixture into egg white halves. Top with ¾ tsp. trout caviar.

Country Ham-Breadcrumb
This savory deviled eggs recipe adds a comforting spin with country ham and Swiss cheese. 

Preparation
Prepare recipe as directed in Steps 1 and 2. Stir ½ cup finely chopped cooked country ham and ¼ cup finely grated Swiss cheese into yolk mixture. Spoon or pipe yolk mixture into egg white halves. Top with desired amount of toasted breadcrumbs.

Preparation
Prepare recipe as directed in Steps 1 and 2. Stir in ¾ cup frozen chopped spinach, thawed; 4½ tsp. grated red onion; and 4½ tsp. poppy-seed dressing into yolk mixture. Spoon or pipe yolk mixture into egg white halves. Top with chopped cooked bacon.
