Tonight, chef superstar José Andrés kicks off the F&W Classic in Aspen with a fantastic Spanish-style barbecue. If you aren't attending, you can still throw your own party with these five terrific grilled dishes.

1. Smoky Paella with Shrimp and Squid

José Andrés is known for his paella. "You cook it outside like you do for barbecue, but at the next level of sophistication. It gives you many options, and you can feed a lot of people once you get the hang of it," he says.

2. Pincho Ribs with Sherry Glaze

These smoky ribs are named after Spanish snacks called pinchos.

3. Fideos with Shrimp, Ham and Clams

Fideos are thin, toasted noodles often used in a paella-like dish known as fideuà. Here, they are cooked over the grill with shrimp, clams and Spanish green olives.

4. Smoked Paprika-Rubbed Steaks with Valdeón Butter

A tender rib eye gets delicious flavor from butter mixed with Valdeón, an intense and creamy Spanish blue cheese.

5. Spanish Pork Burgers

These fast burgers feature delicious Spanish ingredients including piquillo peppers, Idiazábal cheese and serrano ham.
