Superstar chef José Andrés is known for the fantastic Spanish-style barbecues he throws at home when he's not out in the world, helping feed people facing disaster. In his backyard at home, Andrés has a barbecue pit from Texas Pit Crafters, plus two Josper oven-grills, which he can fuel with charcoal. He also has a Grillworks grill, and a Wood Stone oven he uses to make pizzas.

These smoky ribs are named after Spanish snacks called pinchos. Chef Jason McCullar rubs them with a smoked-paprika spice blend, then lacquers them with a sherry-spiked glaze. For an ideal cocktail snack, look for riblets, a half portion of baby back ribs; they're especially meaty. Or ask your butcher to split your rib racks crosswise.
