5 ‘cheesy’ vegan recipes that spare the cheese but not the flavor

Going vegan or dairy-free doesn’t mean you can’t enjoy a savory, “cheesy” meal. Thanks to creative TikTok chefs, there are plenty of innovative recipes featuring cheese substitutes that are just as tasty as the real deal. From nachos to macaroni and cheese, here are five vegan recipes that spare the cheese but not the flavor.

1. Nachos with vegan cheese

This recipe is not your average appetizer. Begin by adding boiled carrots, potatoes and onions to a blender, followed by garlic cloves, onion powder, garlic powder, chili powder, nutritional yeast, ground turmeric, oat milk, salt and pepper. Blend until smooth. Then serve with some tortilla chips and guacamole.

2. Cheesy vegan broccoli rice

“Broc’ ‘n’ roll” with this vegan rendition of “cheesy” broccoli rice. First, cook onion and broccoli in a skillet until soft. Then add rice. Next, mix in a vegan cheese sauce made from a blend of boiled russet potatoes and carrots along with oat milk, nutritional yeast, olive oil, apple cider vinegar, tamari (gluten-free soy sauce), onion powder, garlic powder, smoked paprika, turmeric, salt and pepper.

3. Bagel with jalapeño vegan cream cheese

For a recipe that’s total bagel goals, look no further than this jalapeño vegan cream cheese. Simply add firm tofu, lemon juice, salt, melted coconut oil, vinegar, jalapeño brine, white vinegar, cane sugar and miso paste to a blender. Once smooth, transfer the blend to a container with a lid. Then mix in some diced pickled jalapeños. Refrigerate for a few hours or overnight. Then spread it on your favorite bagel.

4. Vegan mac ‘n’ cheese

When it comes to macaroni and cheese (and puns), you can never be too cheesy! This easy recipe involves cashews soaked in water, blended with garlic paste, everyday seasoning, garlic salt, nutritional yeast, turmeric, ground cumin and paprika. Mix with your choice of cooked pasta and enjoy!

5. Vegan pesto grilled cheese

Grilled cheese lovers will melt over this recipe. First, add cashews, almond milk, lemon juice, nutritional yeast, salt, tapioca starch and apple cider vinegar to a blender. Once smooth, mix the blended ingredients on a skillet over medium heat until the vegan cheese becomes gooey. Spread the vegan cheese on a slice of bread with pesto. Then pan-fry on both sides until golden brown.
