Grilled shrimp loves almost all manner of white wines and rosés, but by pairing wines with the dish's sauce, you can really make a great match. The key is to think about which wine will go with the flavors accompanying the shrimp, instead of just the shrimp itself.

If you don't find your specific sauce or preparation listed, simply employ the general wine and food pairing principle by assessing the dominant flavors in your dish — whether they are herby, smoky, citrusy, or sweet — and select a wine that complements them accordingly.

Pair Sauvignon Blanc with herby flavors

Zesty Sauvignon Blanc has those slight green flavors that are terrific with herbs in sauces like salsa verde and pesto. These whites are also light enough to pair with shrimp in simple vinaigrettes or green salads.

Match off-dry whites with spicy or tropical flavors

If shrimp are served with a spicy dipping sauce, a slightly sweet Riesling is your best choice. The Riesling can also be great with fruit salsas, like mango. You can try off-dry versions of Chenin Blanc (specifically those from Vouvray in France), which are richly textured white wines that often have luscious fruit flavors.

Choose rosé for roasty, savory, or pungent flavors

Lighter French-style rosés are a great catch-all wine for simple grilled shrimp preparations. You almost can’t go wrong. Rosé wine is also terrific with rich sauces, like aioli or compound butters. If your shrimp are bacon-wrapped or served with a rich, roasty type of sauce, like Spanish romesco, a slightly fuller bodied, fruity rosé is just the thing.
