3-Ingredient Swiss Roll Ice Cream Cake

This beautiful cake requires only 3 ingredients and absolutely no baking. The colorful swirls of the Swiss roll make a vibrant, drool-worthy outside. And each slice reveals an even prettier ice cream filling inside. It’s easy to make, it looks fancy, and it tastes like a fruit-filled summer day. Swiss Roll Bomb Cake

Prep Time: 30 minutes

Cook Time: 16 hours (freeze time)

Total Time: 16 hours 30 minutes

Servings: 4-6 servings

Ingredients:

  • 1 box packaged strawberry cream Swiss rolls

  • 2 cups softened vanilla ice cream

  • 1 cup softened pistachio ice cream

Directions:

  • Cut each roll in 5 or 6 slices.

  • Line a medium-sized bowl with plastic wrap.

  • Line the bowl with the slices of the rolls. Push the slices against the bowl and fill in gaps with extra pieces.

  • Add softened ice cream into the bowl and spread to cover all the cake. Leave a crater-shaped cavity in the middle for the second ice cream.

  • Freeze for 8 hours, or until the ice cream is firm.

  • Fill in the hole with the pistachio ice cream.

  • Cover the top with more cake slices.

  • Freeze for another 8 hours, or until firm.

  • Invert the cake on board or plate, and remove the bowl and plastic wrap.
