I usually love pancakes, waffles, muffins or quick breads for breakfast. On other days, I like a breakfast quesadilla—whether it's filled with cheese, eggs, meat or a combo. There's something so satisfying about eating a quesadilla that's typically reserved for lunchtime or dinner, and transforming it into a morning meal—especially on National Quesadilla Day, September 25.
A quesadilla is essentially a flattened Mexican taco that's either made with flour or corn tortillas and stuffed mainly with cheese, with the addition of spices, meats or vegetables.
How to Make a Breakfast Quesadilla
The best thing about breakfast quesadillas is the ingredient combos are endless. You can literally take anything you have laying around in your fridge or pantry and throw it in. To assemble, simply spray a nonstick fry pan with oil, add a tortilla, top with toppings, add another tortilla and fry on each side for a few minutes gently pressing down until the cheese is melted. Once golden and crispy-looking, transfer to a cutting board to cut into individual quesadilla segments.
