Skirt steak is one of our favorite cuts—quick-cooking and full of beefy flavor. It's also easy on the budget compared to other steaks. It's from the short plate of a cow, a forequarter cut from the belly, and is naturally very thin (hence the speedy cooking). There are only two skirt steaks per cow, which might explain why you don’t see this cut very often at the grocery store.

Skirt steak pairs well with spicy flavors, bold herbs, and zesty marinades, which help tenderize its connective tissue. We love it grilled, pan-seared, stir-fried, and even cooked in a stew. And once you try our skirt steak recipes, we think you'll be a skirt steak fan, too.
