Whoever said that St. Patrick's Day was just for drinking Guinness and eating corned beef clearly has never celebrated with someone from Team Delish. We start our celebrations as soon as we wake up with a festive (and often green) St. Patrick's Day breakfast. Think of it: This is the only holiday where Irish coffee is appropriate before 12 p.m. (and we'll absolutely be taking advantage of that). So go on and start your holiday morning off with a little luck of the Irish with one of these 20 St. Patrick's day breakfast recipes.

Okay, St. Patrick's Day is admittedly not all about Irish coffees. You have to eat something too. If you want to go in on a full, authentic Irish breakfast, we've got tons of ideas on how to make a fry-up that'll make you wish it was St. Patrick's Day every day. An Irish breakfast consists of a few staples you likely already have in your kitchen: eggs, fried mushrooms, bacon-y baked beans, grilled tomatoes, potato hash, and the (very, very optional) addition of black pudding. By all means, feel free to take your own liberties, or just go ahead and make some corned beef hash & eggs and some scones. No one will be mad about it.

Whatever you do, don't forget your greens. We've got plenty of vibrant green breakfast foods that'll save you from getting pinched, like our recipes for matcha-hazelnut mochi donuts, green eggs and ham, and spinach smoothies.

Boxty

Can’t decide between a crispy latke and a pile of creamy mashed potatoes? Make boxty. Crunchy on the outside, soft and fluffy in the center, these Irish potato pancakes give you the best of both iconic potato dishes in a single bite. Many Irish eat them with eggs and sausage for breakfast, but you can also serve them topped with applesauce, like a latke, or ketchup like a hash brown. Our personal favorite is a dollop of sour cream and a confetti of chopped scallions.

Green Eggs & Ham

Dr. Seuss wants us all to try green eggs and ham, and with this easy scrambled egg recipe, we have no need not to. Skip the food coloring and use spinach and lots of fresh herb to give the eggs a green makeover perfect for St. Patty's Day. You feel much better about them, plus get some much needed greens in. Use kale or any of your favorite herbs for these!

Instant Pot Hash

Potato hash is one of our favorite ways to feed a hungry brunch crowd, especially this one, made in your Instant Pot. This version gets some delicious smokey flavor from the Canadian bacon, but if your family's not a fan, regular bacon or sausage would be delicious too!

Mochi Donuts

Mochi donuts, also called pon de ring donuts, are a crispy, springy, sweet treat that combines the chewy texture of Japanese mochi with the crispy fried goodness of the American donut. Instead of referring to the contents of the donut, the name is inspired by a Japanese term that describes the texture, mochi-mochi, which is a chewy, pillowy texture. The best part of the donut is undoubtedly the glaze. You can go with one, two, or all of the glazes we added here (we're pretty partial toward our matcha-hazelnut glaze for St. Patrick's Day), or come up with your own flavor combinations!

Air Fryer Oat Pancakes

Whether it's the classic fluffy variety, buttermilk ones studded with blueberries, or flapjacks filled like cannoli, this breakfast treat is a winner with almost everyone. Well, that is, except for the cook, who is all-too-often stuck by the griddle turning out batch after batch. No longer, thanks to the air fryer, which makes giant single-serving pancakes a breeze. These are made with oat flour, which means they're suitable for gluten-free pancake lovers, as well as anyone who loves the slightly nutty taste of oats, an Irish staple.

Slow-Cooker Corned Beef Has

Corned beef and hash is a comfort classic for a reason, and we love how easy to cook it up in a slow cooker. Your favorite brunch classic just got way easier. Why cook in the morning on St. Patrick's Day when you can let your slow cooker do some of the heavy lifting overnight, right?

Bacon Baked Beans

We don't trust people who don't like baked beans. Tangy and smoky, they're the perfect side for anything Southern, but also to accompany a full Irish breakfast. We like ours topped with bacon—yes, because bacon makes everything better—but you can skip if you're vegetarian.

Spinach Smoothie

We get it: The thought of drinking a green smoothie can be a little... unappetizing. But when blended up with coconut water and banana for a little sweetness, this one is totally delicious.

Instant Pot Steel Cut Oats

Did you know? Steel-cut oats are synonymous with Irish oats. The difference between oatmeal is the cut of the oat and the texture. And while we <3 steel-cut oats, we don't like standing over the stove stirring them all morning. Next time, pop them in your Instant Pot for an easy Irish breakfast

Green Shakshuka

Originating in North Africa and now strongly associated with Israeli cuisine, shakshuka typically involves a sauce of tomatoes and red peppers. Our take on this simmered skillet breakfast spins the color wheel, thanks to roasted tomatillos and Swiss chard, and takes flavor inspiration from Mexico. We top these eggs cooked in a tangy, spicy salsa verde with cotija cheese and avocado, but the topping choices are endless, from chorizo to toasted pine nuts.
