Tarragon is known for its fragrance and bittersweet, pungent flavor, reminiscent of anise or licorice. One of the four fines herbes in French cuisine, the herb stars in Béarnaise sauce along with other sauces, spreads, salsa, seafood dishes, and pastas here.
