1. Potatoes au Gratin

To understand the creamy deliciousness that is potatoes au gratin, you must first understand what au gratin actually means. It’s a culinary term that refers to a baked dish with a crispy breadcrumb and cheese topping. Potatoes au gratin is a great example of what we mean by cheesy with a golden brown top. They have recently popped back up in popularity with TikTok creators giving their variation of the classic recipe.

TikTok creator @ambitiouskitchen, also known as Monique Volz, posted a video of her dad’s potatoes au gratin recipe that she makes every Thanksgiving. She describes them as a “sour cream cheddar cheese potato situation.” Honestly, that’s all we could ask for in a potato dish. The recipe is a little more complex and includes making a cheese sauce starting off by creating your own roux. This potato dish uses Yukon gold potatoes sliced in 8-inch rounds. She also adds onions in between the layers of potatoes to add some extra flavor and texture.

Volz’s recipe is also on her website, if au gratin potatoes are the way you want to go this Thanksgiving. Volz says they’re great for the holiday because you can “make them ahead of time and reheat for Thanksgiving” so there’s one less thing to cook on the actual day.

2. Potato Galette

Next, we have a great breakfast potato option that is similar to a hash brown, but fancier with way more flavor. The potato galette is yet another French term, this time used to describe a flat freeform pie with a sweet or savory filling—in this case savory. The key to a crispy, yet soft, centered potato galette is very thinly sliced or grated potatoes with excess moisture removed.

A great viral recipe for this is TikTok creator Shereen Pavlides aka @cookingwithshereen's version. This potato galette recipe is definitely a little simpler than the others. All it calls for is patience and lots of cheese and grated potatoes.

Pro tip: You have to know when to turn your heat up and when to turn it down, as well as when more oil may be necessary. But if you time it all correctly, the outcome is a perfect flat potato pie with its own crispy crust created on the outside and soft cheesy potatoes on the inside. It pairs perfectly with some over-easy eggs and bacon for the morning of Thanksgiving.

The smashing of the potatoes is the key step for this recipe. It helps get the potatoes crispy in the end, which wouldn’t normally happen if you left them whole. They almost end up becoming a potato chip with how crispy they become.

HBH founder Tieghan Gerard makes her recipe unique by roasting the butter and garlic in the oven first to make a nice garlic butter coating for the potatoes. This helps get as much flavor as possible into the spuds. She then tosses the potatoes in the butter and also adds butter on top of the potatoes once they are smashed, before they go in the oven. This allows the potatoes to get as crispy as possible. This is definitely a great side dish, but also a perfect appetizer for you to snack on while Thanksgiving dinner is cooking.

5. Bubble Pillow Potato

Light and crispy, bubble pillow potatoes will go perfectly with any dipping sauce you pair them with. They are like little pillows of potato for your mouth, so pretty much a foodie dream come true.

@msshiandmrhe demonstrates the cooking process perfectly in the below TikTok, but what’s different about these potatoes is they are boiled first, then mashed in a garlic press and mixed into a dough, similar to gnocchi. They have cornstarch and glutinous rice flour added in, giving them that pillowy texture in the end. You can cut them up as small or as big as you’d like, and the final product is a golden brown crispy potato full of light salty flavors on the inside.

One of the better recipes trending on TikTok right now is by Moribyan, a recipe developer on TikTok and Youtube. She describes them as “life changing and easy to make,” two things that would make anyone want to try them at least once.

She starts by mixing all the seasoning in with butter and parmesan. She then tosses the halved potatoes into the herb butter mixture and places them on a baking sheet, with the flat side dipped in parmesan and placed down. They cook at 400 degrees F and become so golden and so crispy it will be impossible not to eat them all yourself.

7. 15-Hour Potatoes

While the name for these potatoes may be a little daunting, the final product may be worth the process if you are in charge of only one dish this Thanksgiving. Though, the longest part of the 15 hours is letting them sit in the refrigerator overnight, so maybe not so much a bad thing if you’re looking to prep some stuff the day before.

The 15-hour potatoes were all the rage on TikTok but not many dared to try them because of the time commitment, but we are here to tell you the process is worth the outcome, with crispy, flaky potatoes for everyone to try. TikToker Poppy O’Toole also known as @Poppycooks created her own 15-hour potatoes and they definitely look worth it.

The recipe starts off like any other potato recipe, by peeling and slicing the potatoes into thin layers. The slices then get tossed in garlic butter and salt and then are stacked and baked at a low temperature for three hours. Then you weigh the potatoes down and chill them in the fridge overnight. The next day they get fried to give them their crisp, and there you have it! 15-hour potatoes that are more than worth the wait.

8. Potato Stack

This trending TikTok potato recipe is similar to 15-hour potatoes, but with way less time. It’s a great way to change up your oven-roasted potatoes by layering them instead of just cutting them up and placing them in the oven. Plus, as always, you end up with such a crispy potato in the end.

These potatoes are easy, as long as you have a cupcake tin to help the process. TikToker @cookiterica made her own recipe for these potatoes that shows what to do perfectly. Just thinly slice some Yukon gold potatoes and throw them in ice water while you prepare the rest. Chop up some thyme and mix it together with melted butter, olive oil and parmesan. Get all the moisture out of the potatoes, toss them in the butter mixture and stack them in a cupcake tin. The key to this recipe is to let the potatoes sit after you take them out of the oven so they don’t fall apart.

9. Twice-Baked Potatoes

These potatoes are a perfect holiday recipe if you’re looking to spice things up in the potato realm. Everything goes with a twice-baked potato, and nothing is better than the ooey-gooey-ness of a twice-baked potato right out of the oven. This has all the goods all wrapped up in the skin of a potato: sour cream, cheese and bacon. What could go wrong?

Food enthusiast and TikToker @kimthefoodie made some oh-so-delicious twice-baked potatoes that went viral on TikTok and had our mouths watering just watching the video. You start off by baking the potatoes like you normally would until they’re done. You then scoop the potatoes out, saving the skins for the second baking process. Mix together the potatoes with sour cream, cheese and bacon. You re-stuff the potato skins with the mixture and bake them again, hence the twice baked. The final product is so creamy inside with the crunchy skin on the outside, they are impossible to resist.

10. Fondant Potatoes

These potatoes are definitely a little more complicated than some of the others. While it’s a classic style of cooking up your potatoes, it can take some time and concentration. The final product is meant to be a creamy cylinder potato that you can cut right into with your fork. If you do it right, they are definitely worth your time.

One TikToker who does it flawlessly is Kelly Scott of @kellyscleanktichen on TikTok. They are definitely fancy, high-class potatoes. You have to start off by peeling and cutting the russet potatoes into rounds and letting them soak. You then put them in “high smoke oil” and sear them off for 3-4 minutes. You flip them, add butter and turn the heat down so as to not burn them.

The key to these potatoes is the chicken stock that gets added next. You want to submerge the potatoes halfway in the chicken stock and then put them in the oven for around 15 minutes. The final texture of these potatoes should be like almost butter, the crispy sear ends added a bit of texture while the potatoes absorbed the moisture from the chicken stock to become creamy yumminess.
