These dinners are some of my favorite and most reliable go-to meals when I'm trying to figure out what to feed my family throughout the fall, as the weather cools down and we begin to crave some more warming, comforting, and hearty flavors. With a mix of carnivorous, vegan, and gluten-free options, there's likely something for everyone. Most importantly, these meals take just minutes to prepare and they keep things interesting at the dinner table, where it can easily begin feeling like a Chopped challenge trying to constantly serve up something totally different from the day before!

Pollo Asado Autentico with Rice

Trader Joe's Ingredients:

It's hard to go wrong with chicken and rice. Vibrant and aromatic rice is skillet-toasted, the hallmark of properly cooked Spanish rice. It is seasoned with garlic and tomato, and can go from your freezer to your dinner plate in under 5 minutes via the microwave. It can also be steamed in a hot skillet to further intensify those savory, toasty flavors. This fragrant rice is a delicious base for TJ's Pollo Asado Autentico. Prepare the marinated chicken breast according to the package instructions, and serve this dish with a side of fresh lime wedges for a touch of acidity and depth of flavor.

Fiocchetti with Pink Sauce

Trader Joe's Ingredients:

Slice the tofu into cubes, drizzle with soy sauce, and gently toss the tofu in cornstarch before cooking in a skillet with hot oil until crispy and golden. Boil the tteok bok ki in water before adding the sauce, simmering until it's thickened and ready to serve. Add the tofu and gently combine to evenly coat everything. To be able to pick this up and enjoy the flavors of classic shawarma chicken by way of your oven for tender, moist meat or on the grill for a charred, crispy finish, is a true gift everyone needs to try this week! Serve this chicken over a bed of white rice with lemon wedges to add some acidity and complimentary flavor to the dish.

Honey Walnut Shrimp with Vegetables and Noodles

You can put away that takeout menu, and there's no need to pull out the deep fryer either. This is a frozen, fully prepared meal that can be cooked and served in less time than delivery—and with way less mess than a from-scratch version. Large shrimp are coated in a savory batter, crisped up, and tossed with walnuts in a sweet and creamy sauce with hints of pineapple. The package contains separate packets of the sauce and candied walnuts. The nuts are tossed in for serving (or not) for added crunch and a hint of toasty, maple flavor. All you have to do is bake the shrimp so they crisp up again in the oven, toss them in the sauce, and sprinkle the final dish with walnuts. Serve the shrimp with a pack of tender Thai Wheat Noodles and a serving of Organic Green Vegetable Foursome. Simply heat up the noodles and steam the vegetables in about an inch of water until cooked and tender.

A staple in my fridge, these sweet, salty, savory, tender, juicy, texture-loaded sausages take just a few minutes to crisp up on the stovetop or grill. Brown the sausage links in a cast iron pan, and place them in toasted brioche hot dog buns for serving. Before the internet reacts to my suggesting ketchup over mustard here, my family (who loves mustard on a hot dog) prefers ketchup with these maple and apple flavors. But if mustard is your jam, then to each their own!

Vegan Spinach and Cashew Ravioli with Pesto

This vegan ravioli invites so many more people to enjoy the cheesy goodness that comes with eating ravioli, as it's made with egg-free semolina pasta and filled with creamy cashew cheese, sautéed spinach, and a crisp sprinkling of breadcrumbs that makes each bite hearty and bursting with flavor. Just boil the ravioli for 3 to 4 minutes in salted water and enjoy with Vegan Kale, Cashew, & Basil Pesto and a sprinkle of chili flakes for added heat and dimension. If you don't like spicy foods, you can simply omit the chili flakes and opt for grated cheese or chopped fresh parsley.

Kimbap

It is comparable to a maki sushi roll, but instead of vinegar-seasoned rice and one filling, this is made with sesame-oil-seasoned rice and contains only vegetables. Braised tofu is wrapped in rice and seaweed with greens, crunchy root vegetables, and pickles for a compact dinner that packs a powerful punch of flavor. Let the Kimbap thaw and enjoy it chilled, or warm it in the microwave for just two minutes for a warm or hot option, depending on your preference. To crisp it up for a tempura-like touch, slice the thawed or warmed Kimbap and pan fry each slice in a warm skillet with 1/4 inch of hot oil for 2 minutes on each side.
