Rethink Mango With These Unique Recipes

Grilled Mango and Shrimp Skewers

Serves 4

  • 2 small zucchini, sliced into 1-inch-thick rounds

  • 1 mango, cut into 1-inch cubes

  • 1 red bell pepper, cut into 1-inch pieces

  • 1 lb peeled shrimp

  • 1 tbsp canola oil

  • Cooking spray

  • 4 tbsp warmed jalapeño pepper jelly, divided

In a medium bowl, toss zucchini, mango, bell pepper and shrimp with canola oil. Thread onto 8 skewers. Coat a grill pan with cooking spray and heat to medium-high. Add skewers; cook 5 minutes per side. Brush with 2 tbsp warmed jalapeño pepper jelly; cook 2 minutes. Turn and brush with additional 2 tbsp jelly. Cover loosely with foil; cook 2 minutes until shrimp is opaque.

The Skinny: 237 calories per serving, 5 g fat (1 g saturated), 32 g carbs, 3 g fiber, 18 g protein

Mango, Red Quinoa and Arugula Salad

Serves 4

  • 3/4 cup red quinoa

  • 1 1/2 cups water

  • 2 tbsp orange juice

  • 1 tbsp olive oil

  • 1/4 tsp salt

  • Pinch of black pepper

  • 1 mango, cut into 1/2-inch cubes

  • 2 cups baby arugula

  • 1/4 cup coarsely chopped pecans

In a medium saucepan, combine quinoa and water; bring to a boil. Reduce to a simmer, cover and cook, about 15 minutes. In a medium bowl, whisk orange juice, olive oil, salt and black pepper. Add quinoa, mango, baby arugula and chopped pecans. Toss.

The Skinny: 247 calories per serving, 10 g fat (1 g saturated), 35 g carbs, 4 g fiber, 6 g protein
