Mediterranean Recipes: 3 Desserts To End Your Meal On A Sweet Note

Who said Mediterranean diet meals had to be savory?

The people who live near the Mediterranean sea really have it all — beautiful scenery, rich culture, delicious food, and radiant health, thanks to their incredibly healthy diet. The Mediterranean style of eating is based on mostly savory ingredients, like vegetables, whole grains, seafood, and of course olive oil. But that doesn’t mean there aren’t ways to add some of diet’s signature ingredients to dessert.  

Olive Oil & Orange Cake

Makes 1 cake

¾ cup sugar
2 eggs
1/3 cup extra virgin olive oil
1 orange, juiced
¾ cups all-purpose flour
½ cup whole-wheat pastry flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt

Preheat the oven to 350° F. Spray 9-inch round cake pan with nonstick baking spray with flour and set aside.

In the work bowl of a stand mixer, combine the sugar and eggs on medium speed until well blended. Add the extra-virgin olive oil and continue to mix until incorporated. Add the orange juice and mix until well combined.

In a separate mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt. Whisk well to combine and break up any lumps.

Add half of the flour mixture to the wet ingredients, and mix on low until just combined. Add the remaining flour mixture and mix on low until just combined.

Pour the batter into the prepared cake pan and bake until a toothpick inserted in the center comes out with just a few moist crumbs, about 25 to 30 minutes. Let the cake cool at least 15 minutes before slicing and serving.

Greek Yogurt with Fresh Figs, Walnuts, and Honey

Serves 2

1 cup Greek-style yogurt
4 ripe fresh figs, quartered
2 tablespoon chopped walnuts, toasted
2 tablespoons honey

Divide the yogurt between two ice cream dishes. Top each with half the figs, half the walnuts, and half the honey. Serve immediately.

Watermelon-Mango Mint Slushie

Serves 2

2 cups chopped seedless watermelon
1 cup frozen mango
¼ cup mint leaves, loosely packed, plus more for garnishing
1 tablespoon sugar
¼ teaspoon salt

Combine the watermelon, frozen mango, mint, sugar, and salt in a blender, and puree until smooth. Garnish with mint leaves. Serve immediately.
