At Last, A Cookie You Can Eat for Breakfast

You already know the nutritional benefits of oats, from lowering bad cholesterol to controlling your appetite, and I’m guessing you’ve got your go-to way to cook ‘em up (maybe even from this selection of sweet and savory oatmeal toppings or this collection of overnight oats recipes). But let’s be honest, sometimes you just want to eat cookies for breakfast. Yes, it’s OK to admit that out loud. And the good news is, I’ve created one that’s delicious, packed with superfoods, and perfect for one of those days.

Superfood Oatmeal Cookies

INGREDIENTS

  • 3 large, very ripe bananas, peeled

  • 1/2 cup creamy almond butter

  • 1 tablespoon butter, room temperature

  • 2 tablespoons honey

  • 1 teaspoon vanilla extract

  • 2 1/2 cups oats

  • 1 teaspoon baking powder

  • 1/4 teaspoon ground cinnamon

  • 1/4 teaspoon salt

  • 1/2 cup (at least 60% cocoa) dark chocolate chips

  • ¼ cup dried cherries

DIRECTIONS

Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper and set aside. In a large bowl, mash the ripe bananas with a fork. Stir in the almond butter, butter, honey, and vanilla extract. Mix until smooth. In a separate medium bowl, stir together the oats, baking powder, cinnamon, and salt. Add the dry ingredients to the wet ingredients and stir until combined. Stir in the chocolate chips and dried cherries. Drop dough by the spoonful onto prepared baking sheet. Bake for 12-14 minutes or until cookies are done. Let cool on baking sheet for two minutes. Transfer to a wire cooling rack and cool completely. Makes 2 dozen cookies.
