Of all the traditions on the first of the year, a bite of cabbage is perhaps the least anticipated to many. But, to that we say: More for us, thanks! With the cruciferous vegetable’s reputation as a lucky eat on New Year’s Day (it’s folded green leaves resembling money), it’d be wise to put away as much as you can on January 1. We’re looking ahead to the holiday this year, because to us, cabbage is the unsung sibling in the family of brassica—one of the most welcoming and versatile green things out there.

Cabbage is cooked in so many different cultures and countries, and no wonder: It’s hardy and you can prepare it just about any way—braise it, stir fry it, put it in soup, bake it, or eat it raw, among other things.
