4 Pasta Recipes for Dinner Tonight

Sarah Carey definitely has our number. “I think if I took a poll, everybody would say that their favorite thing to eat and to cook is pasta,” the host of Everyday Food says at the start of the above video.

It’s like she’s psychic.

We’re not surprised at all, then, that she totally nails four easy pasta recipes: three-ingredient fettuccine Alfredo (that requires a full half pound of Parmesan!), pungent, creamy roast garlic penne, toothsome cavatappi with roasted cauliflower and red onion, and straight-up decadent mac and cheese.

3-Ingredient Fettuccine Alfredo
Serves 4

This recipe for fettuccine alfredo is Martha’s favorite. It comes from Russell Bellanca, the chef at Alfredo of Rome in New York City.

2 sticks butter
1/2 pound grated Parmesan cheese, plus more for serving
Salt
1 pound fettuccine

1. Using an electric mixer, beat butter and Parmesan until creamy.

2. In a large pot of boiling salted water, cook fettuccine according to package instructions until al dente, about 12 minutes. Reserve about 1/2 cup of cooking water; drain pasta.

3. Return fettuccine to warm pot. Toss pasta with 1/2 teaspoon salt, cheese mixture, and 1/4 cup of the pasta water. Add more pasta water, as needed. Serve with additional cheese.

Creamy Roasted Garlic Penne
Serves 4

3 heads garlic
Parchment-lined foil
Olive oil
A few sprigs thyme
3/4 pound penne
1/2 cup grated Pecorino Romano
2 tablespoons cream
Greens such as watercress

Trim the top thirds of garlic heads. Set on parchment-lined foil, drizzle with olive oil, top with thyme, and wrap. Roast at 400 degrees for 1 hour. Cook penne, reserving 3/4 cup pasta water. Squeeze garlic out of skins and heat in a skillet with pasta water and cheese, whisking until thick and creamy. Stir in cream, and penne. Season, and top with greens.
