Romance-Stoking Saturday Morning Smoked Salmon

We know it’s not Valentine’s Day or Mother’s Day or any nationally recognized occasion for which you might be trying to woo or pile on the appreciation. But isn’t the first Saturday of spring a good enough reason to show someone you care?

Yes. Yes, it is. 

There is a way to do it that says, “You, [enter name of sexy person you’re rather fond of], deserve the best in life.”

That way is smoked salmon, served with thinly sliced fennel and a few fronds, then drizzled with olive oil, lemon juice and sprightly zest. Cracked pepper and a few flakes of sea salt don’t hurt. Go to the good bagel place. Make a big carafe of coffee in the French press.

You’re gonna be in good after this.

Fennel and Smoked Salmon
from Everyday Food
Serves 4

1 fennel bulb (about 8 ounces), thinly sliced, plus 1/4 cup fennel fronds
1/2 teaspoon finely grated lemon zest, plus 4 teaspoons lemon juice
Coarse salt and ground pepper
4 ounces thinly sliced smoked salmon
1 tablespoon extra-virgin olive oil

1. In a medium bowl, toss fennel and fronds with lemon zest and juice; season with salt and pepper.

2. Lay salmon on a serving plate, top with fennel mixture, and drizzle with oil.
