Picture this: It’s early. Gotta get to work, kids to school. But first get dressed. No, first dress the kids. No, first wake up.

This is my life in the morning. I’ve tried several different tactics to get my mess of a morning in order, only to fail repeatedly and have to start all over again. At least I’ve found a tasty solution for breakfast (or a quick snack). These brown rice cereal bars can be made ahead of time and saved in an air-tight container for up to two days.

Brown Rice Cereal Bars
Makes one 9-square-inch pan

¼ cup agave nectar
¼ cup packed brown sugar
¼ cup peanut butter
2 tablespoons sesame seeds
2 eggs whites
¼ teaspoon salt
1 cup chopped pecans
3 cups unsweetened puffed brown rice cereal

Preheat oven to 325°F. Line baking pan with parchment paper, extending paper over the ends of the pan.

In a small skillet, add agave nectar, brown sugar, peanut butter, and sesame seeds. Cook and stir on medium heat until sugar is dissolved and all ingredients completely combined.

In a large bowl, whisk together egg whites and salt until frothy. Stir in peanut butter mixture, pecans, and puffed brown rice cereal until all incorporated and
well coated. Spoon mixture into prepared pan; press firmly into pan using the back of a large spoon.

Bake for 35 to 40 minutes until firm and golden brown. Let cool completely in pan. Using the edges of parchment paper extended over the pan, lift out of the pan, then proceed to cut bars into squares.
