Just Peachy Marinade
This dreamy marinade for pork doubles as a flavoring agent and a finishing glaze.
Ingredients
1/2 cup peach preserves
1/2 cup olive oil
1/4 cup apple cider vinegar
3 tablespoon fresh lemon juice
2 tablespoons coarse grained Dijon mustard
11/2 teaspoons kosher salt
1/2 teaspoon black pepper

Preparation
Place 1 cup marinade and 4 pork chops or 2 tenderloins in a large zip-top plastic freezer bag. Seal; turn to coat. Reserve remaining marinade. Chill 2 to 4 hours. Remove pork; discard used marinade. Sprinkle pork with salt and pepper. Grill as desired; baste with reserved marinade during last 5 minutes.
Blueberry-Peach Salsa

Ingredients
1 1/2 cups fresh blueberries
Zest and juice of 1 lime
1 large peach, peeled and finely diced
1 small shallot, finely chopped
3 tablespoons chopped fresh basil
3 tablespoons chopped fresh chives
2 tablespoons hot pepper jelly
1 tablespoon olive oil

Preparation
Coarsely chop half of blueberries. Toss chopped blueberries with whole blueberries and remaining ingredients. Add salt and pepper to taste. Serve immediately, or cover and chill up to 24 hours.
All-Purpose Pork Brine

Ingredients
1 1/2 qt. hot water
3 tablespoons kosher salt
2 tablespoons chopped fresh thyme
2 tablespoons brown sugar
2 teaspoons coarsely ground black pepper
4 garlic cloves, crushed
2 bay leaves
1/2 large lemon, sliced

Preparation
Stir together all ingredients in a large stockpot until salt and sugar dissolve. Let stand 1 hour.
