Pimento Grilled Cheese Egg-in-a-Hole Is a Gooey Valentine’s Day Miracle

Valentine’s Day is the cheesiest holiday there is! That’s why I’m all about grilled cheese sandwiches on V-Day, particularly ones made with pimento cheese and an egg cooked in the middle.

It’s delicious whether you call it an egg-in-a-hole, toad-in-a-hole, frog-in-a-hole, or egg-in-a-basket. “A rose by any other name would smell as sweet.” How’s that cheese for ya?

And lucky for you, Valentine’s Day falls on a Sunday this year. So there shouldn’t be any excuses about not having time to make this. It literally takes 15 minutes. Enjoy!

Pimento Grilled Cheese Egg in a Hole
Serves 4

For the pimento cheese:
5 ounces cream cheese
6 ounces sharp cheddar cheese, grated
3 ounces pepper jack cheese, grated
4 ounces jar chopped pimentos, drained of all liquid
¼ cup mayo
1 tablespoon dijon mustard
½ teaspoon worcestershire
½ teaspoon salt
¼ teaspoon sweet paprika
¼ teaspoon black pepper

For the egg-in-a-hole:
8 slices white bread
4 eggs
Butter, room temperature for easy spreading
Paprika, garnish
Chopped chives, garnish

Make the pimento cheese: Combine all ingredients together until homogenous. This will last in the fridge for up to 4 days in a sealed container.

For the egg-in-a-hole: Make 4 sandwiches with a generous amount of pimento cheese. Spread some butter on each side of the sandwiches. Using a round cutter, cut a whole in the middle of each sandwich. (Save the mini sandwich rounds to fry up later!)

Heat a non-stick fry pan over medium-low heat. Add the sandwiches with the hole and the mini rounds into the fry pan. You may need to do this in batches. Carefully, crack an egg into each sandwich hole. (It may be safer to crack the egg into a small bowl and then slowly pour it into the hole.) Fry for 1 ½ to 2 minutes before very gently flipping the sandwich. Fry for another 1 ½ to 2 minutes until the white of the egg is set but the yolk is still runny, the bread is nicely toasted and the pimento cheese is melty.

Plate the sandwiches and garnish with some paprika and chopped chives. Enjoy!
