Mint Chocolate Chip Cookie Crunch Cake

Today’s minty treat comes from Dallas-based Natasha Merchant and her aptly-named cake blog, The Cake Merchant. By day, Merchant is an oboist. Yes, an oboist! She’s been playing the instrument since the age of five, receiving a bachelors of music in oboe performance from Indiana University and a masters of music from University of Southern California.

But if she had to pick another career path, pastry chef would be it.

This bring us to her cake! Merchant starts with a buttermilk chocolate cake batter that’s made into three 7-inch layers. To create that crunchy texture, in between each layer she crushes up mini chocolate chips, Trader Joe’s Peppermint Jo Jos, and mint meringues. For the frosting, she uses a bit of green food gel for looks and mint extract for flavor. After the top is glazed with with chocolate, she uses the uncrushed mint meringues as cake toppers.
