Milk & Honey Ice Pops from ‘Ice Pops!’

Yahoo Food’s Cookbook of the Week is Ice Pops! 50 Delicious, Fresh and Fabulous Icy Treats by Cesar and Nadia Roden.

Milk & Honey Ice Pops
Serves 8-10

This is what an ice pop should be: simple and delicious. The taste of the honey really shines through when it’s frozen with milk and cream and it all melts beautifully together as you eat it. It’s interesting to experiment with different honeys, such as acacia, orange blossoms, or lavender.

8 tablespoons honey
1 ½ cups whole milk
1 ½ cups heavy cream

Put the honey and 6 tablespoons of the milk in a small saucepan and heat until melted and well blended. Remove the pan from the heat and pour the mixture into a bowl with the cream and remaining milk, stirring until well blended.

Pour the mixture into your ice pop molds, leaving ¼.-inch at the top to let the mixture expand when it freezes. Insert the ice pop sticks and freeze.
