Melon, Mint and Cucumber Smoothie Recipe
Doesn’t it sound refreshing? And indeed it is. This is one super-hydrating smoothie.
It’s just the thing for a hot summer day — to start the day, to revive in the afternoon, or as a cooling nightcap. This drink works anytime.
Get out the blender, cut up a honeydew melon, squeeze some lime juice, and you’re off. The recipe calls for English cucumber, and there’s no need to peel. Mint leaves get blended in too. The result: a smoothie of the palest green with a fresh scent and cooling yet invigorating taste.
2 cups chopped honeydew
1 cup chopped English cucumber
12 fresh mint leaves
2-4 tablespoons fresh lime juice, to taste
1 teaspoon honey
1. Puree ingredients in a blender until smooth.
