Matcha Madness: Matcha Panna Cotta

Matcha Panna Cotta
Serves 4

Ground from the finest, hand-picked green tea leaves, matcha is an antioxidant powerhouse and the Ossetra of teas. Combined with cream and a few other magic-making ingredients you’ll end up with a soul-satiating panna cotta.

2 tablespoons matcha powder
1 tablespoon hot water
1 1/2 teaspoons gelatin
2 1/4 cups heavy cream
1/2 cup sugar
A pinch of salt

Dissolve matcha powder in hot water, then sprinkle mixture over gelatin. Let soften for 1 minute.

In a medium saucepan over low heat, combine gelatin mixture with cream, sugar, and salt. Cook, stirring, until gelatin dissolves completely.

Pour mixture into 4 small teacups, cover with plastic wrap, and chill until set, about 4 hours.
