Make Apple, Walnut, and Brie Bites Inspired by ‘Steve Jobs’

If you’re one of the millions of movie buffs who will tune in to the 73rd Golden Globe Awards on Sunday, you’re going to need some snacks to get you through the more than three-hour show, hosted by wisecracking comic Ricky Gervais. So we turned to Andrew Cavitolo and Bobby Stern, who run New York-based Riviera Caterers, for a few ideas. The duo, whose 100-year-old events company throws corporate bashes and private parties for clients including Victoria’s Secret, Nike, and Refinery 29, believe a good Golden Globes bash can be made even glitzier with a few award-themed treats.

Below, they’ve shared an apple, walnut, and Brie appetizer based on Steve Jobs, whose stars Michael Fassbender and Kate Winslet are nominated for Golden Globes this year for their roles in the biopic about the Apple founder.

‘Steve Jobs’ McIntosh Apple, Walnut, and Brie Bites
Makes 40 bites
5 McIntosh apples
1 small tin candied walnuts (about 12 ounces)
1 small wheel of Brie (about 1 pound)
Salt and pepper
Canola oil
Frozen puff pastry

Peel and dice apples, toss with salt and pepper and canola oil, and roast at 450°F until browned — about 20 minutes, stirring every 5 minutes. Remove excess rind from the Brie cheese and place in a large bowl. Roughly chop the walnuts and add to the cheese along with the cooled apples. Correct seasoning with salt and pepper. Cut thawed puff party into squares that fit into a mini-muffin tin (approx. 2 in. x 2 in.). Push puff pastry into tin and add about 2 tablespoons of filling. Bake at 375°F until puff pastry is golden brown and the filling hot. Allow to cool 5 minutes before serving.
