Let's Make Healthy Stuff Unhealthy!
So many nutrient-rich vegetables are in season right now. Butternut squash is a great source of magnesium and potassium, turnips are high in vitamin C, beets have a good dose of folic acid, sweet potatoes are a source of beta-carotene, collard greens contain soluble fiber and multiple nutrients with anticancer properties, and pears—in addition to being less allergenic than many other fruits—are high in vitamin C. It’s a darn good season for healthy eating.
You know what else it’s a good season for? Comfort food. Meaty, cheesy, soul-feeding food. So let’s take those healthy ingredients and make them way more satisfying (read: add bacon, salt, and butter).
Butternut squash: Layer with bacon and bake into a savory pastry crust!
Turnips: Grate them, fry them, and salt them!
Beets: Plunk small chunks of them into a sea of starchy rice!
Sweet potatoes: Turn them into pie!
Collard greens: Coat in béchamel and top with prosciutto and breadcrumbs!
Pears: Serve them as a side! To pie!
