Resist the urge to pile on any of the usual toppings—lettuce, tomato, ketchup. This rich and delicious Umami burger is topped with port and Stilton.
1. Boil port until reduced to a syrup.
2. Grind the bonito flakes, crumbled kombu and dried shiitakes.
3. Very gently form ground meat into patties, packing only enough to hold them together.
4. Add patties to a super hot flat cast-iron griddle.
