Easy Tomato Sauce
¼ cup extra virgin olive oil
1 small onion, grated
1 28-oz. can crushed tomatoes
1 teaspoon salt

In a saucepan, heat olive oil. When oil is hot, add onion and saute for one minute. Pour in can of crushed tomatoes and add pinch of salt. Stir, and bring to a simmer. Cook for 30 minutes, stirring occasionally. Serve over pasta or meatballs. Sauce can be made two days ahead of time.
