Gluten-Free Blueberry Pound Cake

Tabasco: More than just a popular hot sauce, it’s also the part of Mexico home to Vanessa Hernández and her gorgeous food blog, Chokolat Pimienta. The Venezuela-born writer, professional photographer, and food stylist is mother to Baci and Chepi (her adorable pet dog and bunny, respectively). On her blog, she has a penchant for sweets styled and snapped with retro flair. And if the recipes seem out of reach, her two Youtube channels (one in English and one in Spanish) have handy tutorials.

But on to this killer blueberry pound cake! Hernández creates the crumble by adding nuts, oats, and poppy seeds for texture. For the cake batter, sugar, butter, eggs, and the usual dry ingredients are amped up with fresh vanilla pods and (amazingly) brown rice. Add bright blueberries and a sweet, crunchy crumble, and it’s a pound cake you can eat at breakfast or tuck into for dessert.
