Directions
1. Heat your grill to medium heat.
2. Place the cherry tomatoes on a sheet of foil and drizzle with the olive oil. Seal and place on the grill to cook while you make the dough.
3. Using your hands, or a rolling pin, stretch pizza dough into a round about a ¼ inch thick, making sure there is no lip, and the dough is evenly flat.
4. Oil your grill, and brush the top of your pizza liberally with oil. Place the dough, oil side down, on the grill, and let it cook until it begins to crisp and char, 6-7 minutes.
5. Once you have flipped the dough over and have cooked one side, top the charred side of the dough with the pieces of mozzarella. Close the lid of the grill and cook 2-3 minutes, until dough is cooked through and cheese has melted. Remove the tomatoes and very carefully open. Spoon the tomatoes over the pizza and top with basil and parmesan cheese. Cut into slices and serve.
