Four-Star Chef Jean-Georges Vongerichten to Open Vegan Restaurant

We haven’t heard much about the raw food movement since it was huge back in the ’90s and early ’00s (ok, except for you, L.A., you still have a bazillion), so we were a bit surprised to learn on Tuesday that famed toque Jean-Georges Vongerichten plans to add an all-vegan, all-raw eatery to his portfolio of ABC restaurants.

Isn’t paleo the diet du jour? Whatevs. Newly vegan Jay-Z, Beyonce, and Al Gore can dine together at this new spot if they please.

"[We’re] opening a vegetarian restaurant in the spring: 100% vegetarian, raw, and vegan,”  Vongerichten told online lifestyle site The New Potato. “Right now we’re starting to import and use local things that we don’t make. But eventually, we’ll do our own jams under the ABC label. The brand is growing and changing.”

Changing, indeed. Sounds like you won’t be able to serve your signature molten chocolate cake there, Jean-Georges.

"Cacao on flour" just doesn’t have the same ring to it.
