Dark & Stormy from ‘Tiki Drinks’

This week we’re taking a break from healthy bites to serve up a summery selection of classic beachcomber libations from Tiki Drinks: Tropical Cocktails for the Modern Bar by Nicole Weston and Robert Sharp (Countryman Press). Try making one at home and let us know what you think!

Dark & Stormy
Makes 1

This two-tone cocktail is a Bermudan staple that is always made with Goslings Black Seal rum and ginger beer. The Goslings has a distinctively dark color and a smoky flavor that offers a contrast in both looks and flavor to sweet, spicy ginger beer, and we recommend sticking to that rum for the best results in the drink. The original recipe is limited to two ingredients; our version includes a bit of lemon and lime to make the spice of the ginger beer pop even more.

1½ ounces Gosling’s Black Seal rum
½ ounce lemon juice
½ ounce lime juice
Ginger beer

Fill a highball glass with ice. Add the rum, lemon juice, and lime juice. Top with ginger beer and stir with a bar spoon to combine the ingredients. Garnish with a citrus ship.
