Cocktail Party Throwback: Baked Brie in Puff Pastry

Here is one of our favorites, a throwback cocktail party appetizer from Caitlin Holcomb, a creative strategist who works with advertisers.

Baked Cranberry Brie in Puff Pastry
Serves 6-10

This recipe is based off of something that my college roommate would make for us every year around the holidays. I love it because it doesn’t require many ingredients or much time to make, but it looks really impressive. The puff pastry forms a crunchy, golden brown crust around the brie, and when you cut into it, the melted cheese oozes out and can be spread onto crackers or sliced apples. The cranberry sauce adds a sweet-tart flavor and also looks festive. It makes a great appetizer for holiday parties and potlucks.

1 sheet of puff pastry, thawed
1 whole wheel of brie cheese (roughly 8 ounces)
1/4 cup fresh cranberry sauce
1 egg, lightly beaten
Splash of water

Preheat the oven to 375 degrees F.

Roll out the puff pastry to 1/4-inch thick. Place the brie in the center of the pastry, then spread the cranberry sauce on top of the cheese. Fold the ends of the pastry over the cheese and crimp to secure it in a little package. Trim extra pastry if needed.

In a small bowl, whisk together the egg and water. Brush some of the egg wash over the outside of pastry.

Bake the brie in a baking dish for 30-35 minutes, or until the pastry is golden brown.

Let cool slightly. Serve with crackers and sliced fruit.
