Cake of the Day: Stained Glass Window Cake

Looking at this cake makes you feel as though you’ve stepped into a church; you’re admiring the tinted glass windows as the light streams through them. But unlike the church experience, you get to eat this version from Maggie Austin.

Austin began her career as a classical ballet dancer for the California’s Fresno Ballet and later with the Joffrey Ballet in Chicago. When she broke a bone in her foot, the injury brought her dancing years to an end, but Austin soon found that a kitchen clog suited her just as well as a satin slipper. She completed the baking and pastry program at The French Pastry School in Chicago (with honors, no less) and opened a small wedding cake shop in Washington, D.C., with her sister. Since then, she has gained popularity for her signature fondant frill cakes, her work has been featured in Martha Stewart Weddings, and she was even commissioned to create holiday treats for the White House.

For this stained glass window cake, Austin paints the fondant with food dye freehand. No stencils, no guidelines. That ballerina discipline must be at play, here… See more of Austin’s cakes (or custom-order one!) on her website.
