Cake of the Day: Semolina Cake with Pistachios and Honey

Food and lifestyle photographer Aysegul Sanford brings us today’s rustic semolina cake that’s nutty, crumbly, and packed with over a cup of pistachios!

Born and raised in Turkey, Sanford moved to the the U.S. to start her profession as a hotelier. Years later she married her American husband Dwight, whose career took them to the beautiful island Virgin Gorda in the British Virgin Islands. Now to her recipe for cake! For her husband’s birthday decided to bake a dessert with his favorite snack, pistachios. Taking a spring form pan Sanford fills it with a batter made with semolina, eggs, sugar, and grounded up pistachios. After the cake bakes to a golden brown, she brushes over a honey syrup. Finally, when it’s ready to serve she decorates the top with roughly chopped pistachios and beautiful pink flowers. The verdict? “It was a big hit.
