Cake of the Day: Hazelnut Torte with Mascarpone Icing

Stylist Emma Duckworth brings us today’s cake and a little sneak peek of spring! Duckworth spent her childhood growing up as an expat in Asia. After a trip abroad to Sydney, she’s been living there ever since. A jack-of-all-trades, she works as a freelance stylist in lifestyle, food, and interiors. Her work has been featured in Austraila’s White Magazine, Home Beautiful, and Fete Press.

Duckworth’s love for food and all things sweet brings us to her cake. “A great ‘occasion’ cake,” she writes. “Your family and friends will definitely remember the multi-layers and the beautiful fruits on top.” For the batter she combines hazelnut meal combined with flour for a lighter texture versus traditional denser tortes that omit flour. She uses mascarpone icing to frost the outside and leaves the sides bare giving it a rustic look. She decorates a crescent moon with chopped hazelnuts, blueberries, and figs on the top.
