Cake of the Day: Chamomile Cake with Honey Frosting

Adrianna Adarme, of the recipe blog A Cozy Kitchen, is behind today’s chamomile-laced dessert. The pie maker and corgi mother is known for her warm photos and cozy dishes that make every day feel special with easy-to-follow recipes. Her book, The Year of Cozy, is set to release Oct. 6 with Rodale Books. But besides her excellent pie-making skills, Adarme know how to bake a killer cake, like this one made with a lovely combo of honey and chamomile.

“This cake is light and fluffy with the faintest hint of chamomile,” she writes. “Chamomile is a gentle flavor. It’s not a strong tea flavor but it helps that the milk in the cake recipe is steeped in tea and then tea leaves are added to the actual cake.”

To create the tea-infused batter, she seeps chamomile tea leaves in warm milk and honey. The tea-spiked milk is mixed with butter, flour, eggs, and ground tea leaves and then baked in two cake pans. For the frosting she makes what she deliciously describes as sweet buttery honey with a touch of salt. She uses it to frost a crumb coat and around the top Adarme traces the border with a ring of organic chamomile flowers.
