Cake of the Day: Bouchon Bakery’s Lemon Raspberry Cake for Two

First up, the country’s most revered chef, Thomas Keller. Here, we feature one of Chef Keller’s popular desserts, the lemon raspberry cake at his Bouchon Bakery, as our Cake of the Day.

This lemon mousse cake from Thomas Keller’s Bouchon Bakery is meant for two.

Cut into it, and you’ll find lemon mousse that houses another mousse, this time raspberry flavored, in the center. Both sit on a round of sponge cake spread with a thin layer of raspberry jam. All of this is encased in a vanilla-infused white chocolate glaze and topped with fresh raspberries and edible silver leaf.

“We thought this 4-inch cake would be great for guests who need a last-minute cake,” says Bouchon Bakery Pastry Chef Janine Weismann. It was an answer to a need from visitors in search of ready-made birthday cakes. The flavors, Weismann says, vary by season; this lemon one will be available until June.

So like we said: It’s meant for two, but that doesn’t mean it has to be. Sometimes sharing just isn’t in the white chocolate cards. Especially if it’s your birthday.
