Banana Split Smoothie
Serves 2

Want a sweet treat for your kiddos without the artificial ingredients and sugar overload? We did, too! That’s why we created our take on this classic treat — so our kids could feel like they are drinking the most rawkin’ Banana Split Milkshake on the block! Top with fresh coconut whipped cream (see below) and they will never know that it has a handful of fresh fiber and nutrients included!

1 cup spinach
2 cups unsweetened almond milk
2 bananas
1 cup cherries, pitted
2 tablespoons cacao powder
2 tablespoons sliced almonds
Homemade Coconut Whipped Cream (see below)

Blend the spinach and almond milk until smooth.

Add the bananas, cherries, cacao powder, and almonds and blend again. Pour into 2 glasses and top each with a dollop of coconut whipped cream, if using.

Homemade Coconut Whipped Cream
Decadent plant-powered whipped cream is possible and delicious. Bonus: It takes only a few minutes to make. Bon appétit!

1⁄2 cup coconut cream
2 teaspoons maple syrup
1 teaspoon vanilla extract

Place a mixing bowl and whisk in the freezer for 5 minutes to chill.

Pour the coconut cream into the chilled bowl and whip until light and fluffy (peaks will form).

Add the maple syrup and vanilla and whip again.
