Baked French Fries: A Little Healthy and a Lot Decadent

Oven Baked Fries With Homemade Mayo

There’s nothing like homemade mayonnaise. It’s not hard to make but it seems like a luxury. See how quickly and simply you can achieve a bit of bliss…

For the mayo:

1 cup light flavored olive oil
1 fresh egg yolk, room temperature
sea salt

For the fries:

3 large baking potatoes
2 cloves garlic, thinly sliced
sprig of fresh rosemary
Olive oil
Flakey sea salt

Slowly drip oil into egg yolk, whisking gently to form a good emulsion. Work until oil is fully incorporated. Season with salt. Set aside.

Preheat Oven to 450°F. Cut potatoes into wedges (we like them on the thiner side). Toss potatoes, garlic and rosemary (broken into pieces/leaves) with a healthy dosing of oil oil so they are nicely coated. Place on baking sheet taking care to not overlap wedges. Bake for 45 minutes in preheated oven. Serve with homemade mayo.
