Avocado Egg in a Basket Recipe

This dish is a grown-up version of my favorite childhood breakfast, eggs in a basket. Toasty bread with a soft-cooked egg in the middle is pretty much perfect on its own, but when it’s fancied up with a smashed buttery avocado, magical things happen. It’s quick to make and deliciously filling. Have it for breakfast, have it for a snack — have it anytime you want more out of your avocado toast.

Avocado Eggs In A Basket
Serves 1

Ingredients
1 slice of wheat bread
Oil or butter, for drizzling or a thin layer
1 egg
Half an avocado, mashed
Salt, to taste

Instructions
1. Cut a 2 ½ or 3-inch circle out of your bread and drizzle both sides lightly with oil or spread both sides with a thin layer of butter.

2. Heat a nonstick skillet over medium heat and toast the bread and its circle on one side until brown.

3. Flip them over, and then crack the egg into the hole. Cover the pan and cook as desired.

4. Meanwhile, mash up your avocado and set aside.

5. Remove the bread and its circle from the heat and spread with avocado. Sprinkle with salt and serve. Use the little circle to sop up all the yummy, egg-yolk goodness!        

Tip: When storing an avocado that’s already been cut open, coat the exposed areas with a thin layer of olive oil before placing in the fridge. This will prevent the avocado from turning brown too quickly.
