5 Easy Microwave Desserts

For days when it seems like it’s just going to require Too Much Energy to preheat that stove, here are five microwave-friendly recipes you can make on the fly, including cookies, lemon bars, Nutella cake (!) and more.

Chocolate Chip Cookie
Adapted from No. 2 Pencil
Serves: 1

1 tbsp. melted butter
1 tbsp. dark brown sugar
Slightly less than 1/4 cup flour
2 tbsp. semi-sweet chocolate chips
1 tbsp. sugar
3 drops vanilla extract
Pinch of salt
1 egg yolk

Combine and stir butter, sugars, vanilla, and salt in microwave-safe mug or cup. Add egg yolk and stir. Add flour and stir. Add chocolate chips and stir. Microwave for 40-60 seconds (don’t cook past 1 minute).

Cinnamon Bun Cake
Adapted from Cooking Classy
Serves: 1

1 tbsp. buttermlik
3/4 tsp. ground cinnamon
2 1/2 tbsp. light brown sugar
1/4 cup flour
1/4 tsp. baking powder
1/8 tsp. salt
1/4 tsp. vanilla extract
2 tbsp. applesauce
1 tbsp. vegetable oil
Dash of nutmeg

Combine all ingredients in a microwave-safe mug and mix thoroughly. Microwave for 1 minute.

Peanut Brittle
Adapted from Plain Chicken
Serves 2-4 as a snack

1 tsp. baking soda
1 tbsp. butter
1 tsp. vanilla extract
1 cup peanuts
1 cup sugar
1/2 light corn syrup

Combine sugar and syrup in a glass bowl. Microwave for 5 minutes. Add butter, vanilla and peanuts. Stir. Microwave mixture for 1 minute 30 seconds. Remove and stir baking soda in immediately. Pour mixture onto parchment paper and spread evenly. Let cool for 1 hour.

Nutella Cake
Adapted from Live Love Pasta
Serves: 1

3 tbsp. vegetable oil
4 tbsp. self-rising flour
3 tbsp. cocoa powder
1 egg
3 tbsp. Nutella
3 tbsp. milk
4 tbsp. sugar

Combine all ingredients in a cup and mix thoroughly. Microwave on high for 1:30 - 3 minutes, depending on your microwave. 

Lemon Bars
Original recipe from Mom on Time Out
Makes: 25 squares

Crust:
1 cup flour
1 tbsp. lemon zest
6 tbsp. melted butter
3 tbsp. powdered sugar

Filling:
1 cup sugar
2 tbsp. lemon zest
3 eggs
1/3 cup lemon juice
1 tbsp. flour
1/2 tsp. baking powder
1/4 tsp. salt

Crust:
Combine flour, powdered sugar and lemon zest. Stir in melted butter and knead into a dough. Press dough into a lightly greased 9x9-inch pan to form a crust. Microwave the crust for 3 minutes at 80 percent power.

Filling:
Combine sugar, zest, eggs, and lemon juice in a large glass bowl. Whisk together. Add flour, baking powder and salt. Pour filling over crust and microwave for 3 minutes at 80 percent power. Microwave for an additional minute if it hasn’t set.
