Indulge With These 5 Comfort Foods of Summer
By David Tamarkin, Epicurious
There are so many great vegetables available right now. Let’s put them on a pizza!!
It’s not out of line to assume that you’re going to start your weekend at the farmer’s market, is it? Cool. But can we have some real talk? Just you and me? Yes, that market haul can and should be used to whip up big, summer salads. But you don’t have to be so virtuous all the time. Below, check out 5 comfort foods you can make in the middle of summer.
1. FRITTATA
Early summer asparagus is great, but it’s not going to keep you full. That’s why you mix it with eggs and sausage.

2. PIZZA
Eat some carrots raw for a snack. Use the rest as the base of this ‘za. A creamy, sweet carrot purée takes the place of tomato sauce in this unexpected pizza.

3. STRAWBERRY PANCAKES
Do not—I repeat: do not—skip the step of brushing each pancake with butter as it comes off the griddle. It’s Sunday morning, for heaven’s sake.

4. A RHUBARB COCKTAIL
Normally I’d suggest you make a rhubarb pie or cake or crumble or compote—it’s not going to last forever, you know. But considering the day started with pancakes, a cocktail somehow seems more responsible.

5. A TWO-HANDED SANDWICH
Take whatever you have left from the market and slap it between two slices of bread. (I hate to tell you this, but this meal actually is virtuous.)
